Ingredients

  • 1.5 cups cooked chickpeas (drained and rinsed)
  • 0.33 cup smooth tahini (recommend brands like Cedar's, Seed + Mill, or Soom)
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice (plus more to taste)
  • 1 garlic (clove)
  • 0.5 tsp sea salt
  • 5 tbsp water (or as needed to reach desired consistency)
  • paprika, red pepper flakes, or fresh parsley (for garnish)
  • warm pita bread or veggies (for serving)

Steps

    Place the chickpeas, tahini, olive oil, lemon juice, garlic, and sea salt into a high-speed blender.

    Blend until very smooth, using the blender baton to assist if necessary. Add water gradually as needed to achieve a light, fluffy, and creamy consistency.

Notes

Store leftover hummus in an airtight container in the refrigerator for up to 5 days. If using a food processor instead of a high-speed blender, you may need to process for a few minutes longer to achieve the same level of smoothness.
