Weights are estimates. Together, the ingredients weigh about 1.1 kg before cooking, which is about 220 g per serving.

Steps

Make the Garlic Butter

  1. Add the melted butter, finely chopped parsley, minced garlic, 3 tablespoons grated Parmesan, salt, black pepper, dried oregano, and red pepper flakes to a small bowl. Mix until combined, then set the garlic and herb sauce aside.

  2. Preheat the oven to 400°F (200 °C) (200°C (400 °F)).

Prepare the Potatoes and Bake

  1. Rinse the potatoes well to clean the skins, then slice each potato in half. Transfer the potato halves to a bowl.

  2. Add the garlic and herb butter sauce to the potatoes and toss until they are evenly coated.

  3. Place the 1/2 cup grated Parmesan in a bowl. Dip the flat, skinless side of each potato into the Parmesan, pressing down so the cheese adheres and completely covers the cut side.

  4. Transfer each potato to a non-stick baking tray with the Parmesan-coated flat side facing down. Repeat with the remaining potatoes.

  5. Bake for 30 to 40 minutes, until the bottoms are golden brown and crispy and the potato centers are cooked through, soft, and fluffy.

  6. Remove the potatoes from the oven and serve with your favorite dipping sauce.

Notes

The source recommends baby Dutch yellow, baby gold, or Yukon Gold potatoes; baby red potatoes may also be used but can take longer to cook. For extra-cheesy potatoes, add more grated Parmesan over the potato skins before baking. Suggested dipping sauces include ketchup and ranch. The recipe is also suggested with steak and salad.
