Potato and BBQ Chicken Roll
A creative and delicious way to reinvent chicken and potatoes. It features a baked potato rosti base filled with shredded chicken in a BBQ, beer, and honey sauce, then rolled with melted cheese.

Ingredients
- 2 large potatoes (grated and well-drained)
- 3 eggs
- shredded cheese (to taste, for the base and filling)
- salt (to taste)
- pepper (to taste)
- garlic powder (to taste)
- paprika (to taste)
- 2 chicken breasts
- BBQ sauce (amount needed to cover the chicken)
- 1 lata stout or dark beer (small can)
- 2 tbsp honey
- 1 orange juice (the juice of one orange)
- 1 onion (chopped)
- 2 cloves garlic (minced garlic cloves)
- cheddar cheese (optional, for the filling)

In a bowl, mix the chicken breasts with the beer, honey, orange juice, and BBQ sauce. If possible, let it marinate for a while to intensify the flavor.

In a hot skillet, brown the chicken breasts. Add the chopped onion, minced garlic, and all the marinade liquid.

Cook over medium-low heat for 30 to 40 minutes until the chicken is tender. At the end, increase the heat to let the sauce reduce and concentrate.

While the chicken is cooking, grate the potatoes. Squeeze them very well with your hands or a cloth to remove all excess liquid.

In a bowl, mix the dry grated potato with the shredded cheese, eggs, salt, pepper, garlic powder, and paprika.

Preheat the oven to 200°C. Line a baking sheet with parchment paper or a silicone mat.

Spread the potato mixture evenly onto the sheet and bake at 200°C until golden brown and firm.

Once the chicken is ready, shred it and mix it well with the concentrated sauce from the skillet.

Remove the potato base from the oven. Flip it over so that the most golden side faces outward when rolling.

Spread the BBQ chicken over the potato base. Add more shredded cheese and cheddar cheese if desired.

Roll carefully, pressing firmly to keep it compact.

Bake for a few additional minutes until the cheese inside has completely melted.
Notes
If you don't have time to marinate the chicken, you can cook it directly with the liquids as indicated in the steps. Make sure to drain the grated potato very well so that the base is crispy and not gummy.
