A practical way to meal prep chia pudding for the whole week. It is set with gelatin so it can be cut into portions and is served with yogurt and granola.

Ingredients

  • 80 g chia seeds
  • 800 ml plant-based milk (can be your choice)
  • vanilla extract (to taste)
  • sweetener (or sweetener to taste)
  • 21 g unflavored gelatin (equivalent to 3 standard sachets)
  • 105 ml water (to hydrate the gelatin)
  • mixed fruits (chopped (e.g., strawberries, grapes, kiwi, blueberries))
  • yogurt (for serving)
  • granola (for serving)

Steps

    In a large container, mix the chia seeds with the plant-based milk, vanilla extract, and sweetener to taste.

    In a separate small bowl, hydrate the unflavored gelatin with the 105 ml of water. Let it rest for a few minutes until it solidifies.

    While the gelatin is hydrating, wash and cut the chosen fruits (strawberries, grapes, kiwi) into small pieces.

    Heat the hydrated gelatin (in the microwave or in a double boiler) until it melts and becomes liquid again.

    Stir the liquid gelatin into the chia and milk mixture, mixing well to combine.

    Add the chopped fruits and frozen blueberries to the preparation and mix gently.

    Pour the mixture into a large rectangular dish and place in the refrigerator. Ideally, let it rest overnight so the chia hydrates and the gelatin sets completely.

    Once firm, cut into squares. Serve each portion with a dollop of yogurt and granola on top.

Notes

Lasts 3 to 4 days in the refrigerator. If you are cooking for one person, it is recommended to make half the recipe so it doesn't go to waste.
