Ingredients
- 1 lb colossal shrimp (16- to 20-count per pound, peeled and deveined)
- 0.5 cup all-purpose flour
- 0.5 tsp salt (divided)
- 0.25 tsp ground black pepper
- 1 egg (large)
- 0.25 cup canned unsweetened coconut milk
- 0.75 cup panko bread crumbs
- 0.75 cup shredded coconut (sweetened or unsweetened)

- 0.5 avocado (large, peeled, seeded, and finely chopped)
- 0.25 cup red bell pepper (finely chopped)
- 0.25 cup red onion (finely chopped)
- 0.25 cup fresh cilantro (coarsely chopped)
- 1 tbsp lime juice
- 1 tbsp bottled hot pepper sauce (plus more for serving (optional))
- 0.5 cup sour cream
- 0.25 cup fresh cilantro (finely chopped)
- 1 tbsp mayonnaise
- 2 tsp lime juice
- 0.25 tsp salt
- 8 corn tortillas (6-inch, warmed)

Gather all ingredients.

Pat shrimps dry with paper towels.

Combine flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a shallow bowl.

Whisk together egg and coconut milk in another shallow bowl.

Stir together panko and shredded coconut in a third shallow bowl.

With basket inserted in the appliance, preheat air fryer to 350 degrees F (175 degrees C) for 10 minutes.

Preheat oven to 170 degrees F (77 degrees C) (or the warm setting) to keep cooked shrimp warm.

Working in batches, dredge shrimp in flour mixture to coat, shaking off excess.

Notes
