  • 2 lb Carrots (Peeled and roll-cut into 1-inch chunks; cut diagonally, rotate the carrot a quarter turn, and cut again for irregular wedge-shaped pieces.)

  • 1 tsp Brown mustard seeds (Yellow mustard seeds may be substituted.)
  • 1 small Yellow onion (Finely chopped.)
  • 2 tbsp Fresh ginger (Finely grated or minced.)
  • 3 cloves Garlic (Finely chopped or grated.)
  • 1 tbsp Curry powder
  • 0.5 tsp Ground turmeric
  • 1 can Coconut milk (Full-fat coconut milk; shake the can before opening.)
  • 0.5 cup Water
  • 1 tsp Kosher salt (Or season to taste.)
  • 0.5 cup Raw or roasted cashews (Coarsely chopped; toast first if using raw cashews.)
  • 1 tbsp Lime juice (For finishing.)
  • 0.25 cup Cilantro (Chopped, for garnish.)

Steps

    Prepare the carrots by peeling them and cutting them into irregular roll-cut pieces about 1 inch long. Set aside the prepared carrots along with the chopped onion, ginger, and garlic so they can be added quickly during cooking.

    Place a large saucepan or Dutch oven over medium heat and add the oil. Heat until the oil shimmers.

    Add the mustard seeds. Cook for about 30 seconds, stirring, until they begin to pop and smell sharp and nutty.
