Steps
Preheat the oven to 425°F (220 °C). Line a baking sheet with parchment paper and set it aside.
In a large bowl, mix together the all-purpose flour, masa harina, baking powder, and salt.
Shred the frozen butter with a box grater.
Add the shredded butter to the flour mixture.
Mix with a wooden spatula until the mixture is crumbly and loosely combined.
Stir in the honey.
Stir in the chilled whole milk until just combined.
Transfer the dough to a well-floured surface. Using your hands, knead and fold it until it comes together. The dough should not be completely smooth; lumps should remain.
Lightly pat the dough into a small rectangle.
Fold the dough in half and gently flatten the layers together with your hands.
Rotate the dough 90 degrees and fold it in half again. Repeat this folding process 3–4 times, taking care not to overwork the dough.
Using your hands, flatten the dough to ½-inch thickness.
Lightly dust a 3-inch round biscuit cutter with flour.
Press the cutter straight down into the dough and place each cut biscuit on the prepared baking sheet.
Gently rework the scrap dough together without creating additional layers, then continue cutting biscuits until all the dough is used. The recipe should yield 8 biscuits.
Brush the tops of the biscuits with the beaten egg.
Bake for 14–16 minutes, or until the tops are just beginning to turn lightly golden brown.
If desired, brush the biscuits with melted butter immediately after baking. Serve warm.
Notes
Keep the ingredients as cold as possible. The author recommends freezing the butter for at least 20 minutes and using very cold milk for the flakiest biscuits. Salted butter can be used for a richer, saltier flavor; omit the listed salt. Optional additions mentioned by the author include shredded cheese, diced jalapeños, fresh herbs, or turbinado sugar on top before baking.
