Salmon Sushi Bake
A comforting and easy weeknight meal featuring seasoned sushi rice topped with a creamy salmon and imitation crab mixture, baked until warm and served with seaweed snacks.

Ingredients
- 1 lb Salmon fillets (seasoned and air-fried, or use leftover cooked salmon)
- 3 cup Sushi rice (cooked, preferably freshly made)
- 3 tbsp Rice vinegar
- 1 tbsp Sugar
- 0.5 tsp Salt
- 8 oz Imitation crab sticks (shredded and cut into small pieces)
- 4 oz Cream cheese (softened)
- 0.25 cup Kewpie mayo
- 1 tbsp Sriracha (adjust to taste)
- 1 tsp Soy sauce
- 1 tsp Sesame oil
- 2 Green onions (sliced)
- Furikake seasoning (for topping the rice)
- Unagi sauce (for garnish)
- Spicy mayo (for garnish)
- Seaweed snacks (for serving (nori sheets))
- 1 Cucumber (sliced, for serving)
- 1 Avocado (sliced, for serving)

Preheat your oven to 400°F (200°C). Season the salmon fillets and cook them in an air fryer until fully cooked and flaky. Alternatively, you can use leftover cooked salmon.

In a small bowl, combine the rice vinegar, sugar, and salt. Stir until the sugar and salt are dissolved.

Pour the vinegar mixture over the freshly cooked sushi rice and fold gently to season. Set aside.

Shred the imitation crab sticks and cut them into small pieces. Flake the cooked salmon into a bowl.

To the salmon and crab, add the cream cheese, Kewpie mayo, sriracha, soy sauce, sesame oil, and sliced green onions. Mix until thoroughly combined.

Grease a casserole dish. Press the seasoned sushi rice into an even layer at the bottom of the dish.

Sprinkle a generous layer of furikake seasoning over the rice.

Spread the salmon and crab mixture evenly over the top of the rice and furikake.

Place the dish in the oven and bake for 10-15 minutes until the topping is warmed through and slightly bubbly.

Remove from the oven and garnish with a drizzle of unagi sauce and spicy mayo.

Serve immediately with seaweed snacks (nori), sliced cucumber, and avocado slices.
Notes
You can use leftover salmon to make this recipe even faster. For the best texture, use freshly made sushi rice rather than cold, day-old rice.
