Ingredients

  • 450 g Ground chicken (ground chicken breast)
  • 1 tsp Chili powder (to taste)
  • 0.5 tsp Salt (to taste)
  • 2 tbsp Fresh cilantro (finely chopped)
  • 6 Rice paper sheets (standard circular sheets)
  • Water (to hydrate the rice paper)
  • Oil spray (for the air fryer)

Steps

    In a medium bowl, mix the ground chicken with the chili powder, salt, and finely chopped fresh cilantro until well combined.

    Quickly dip a sheet of rice paper into a bowl of warm water until it softens slightly but still maintains some structure.

    Place a portion of the chicken mixture in the center of the rice paper and roll it tightly, securing the ends as if it were a spring roll.

    Using kitchen shears, cut the roll into small, bite-sized pieces.

    Preheat the air fryer to 400°F (200°C).

    Place the bites in the air fryer basket, ensuring they do not touch. Lightly mist with a bit of oil spray.

    Cook in the air fryer at 400°F (200°C) for 10 minutes or until the rice paper is crispy and the chicken is fully cooked and golden brown.

Notes

Can be served with a sweet chili sauce or soy sauce. Be sure not to over-soak the rice paper as it becomes difficult to handle; it only needs a few seconds in the water.
