Ingredients

  • 1.5 lb chicken breasts (boneless, skinless; about 3-4 breasts)
  • 1 tbsp olive oil
  • salt (to taste)
  • black pepper (to taste)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup parmesan cheese (grated)
  • 1 tbsp fresh parsley (chopped for garnish)

Steps

  1. 1

Preheat your oven to 400°F (200°C).

  2. 2

Place the chicken breasts in a single layer in a large baking dish or oven-safe skillet.

  3. 3

Drizzle the chicken with olive oil and season both sides evenly with salt, black pepper, garlic powder, and onion powder.

  4. 4

In a small bowl or measuring cup, whisk together the heavy cream and chicken broth.

  5. 5

Pour the cream mixture over and around the chicken breasts in the pan.

  6. 6

Sprinkle the grated parmesan cheese evenly over the top of the chicken.

  7. 7

Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

  8. 8

Remove from the oven and let the chicken rest for 5 minutes. Garnish with fresh parsley before serving.

Notes

This recipe is designed as a 'dump and go' meal. For a deeper flavor, you can sear the chicken in the skillet for 2-3 minutes per side before adding the liquids and baking. Serve over mashed potatoes, rice, or pasta to soak up the extra sauce.
