Ingredients
- 1 tbsp Olive oil (Add a little more if the onions start to stick; additional amount not specified.)
- 2 Yellow onions (Diced)
- Salt (A pinch for seasoning the onions)
- 2 cup All-purpose flour
- 5 tsp Granulated sugar
- 2.25 tsp Baking powder
- 0.25 tsp Baking soda
- 0.75 tsp Kosher salt
- 0.25 tsp Ground black pepper
- 2 tbsp Fresh thyme
- 6 tbsp Unsalted butter (Cut into small cubes)
- 4 oz Gruyère (Cut into small cubes)
- 0.5 cup Heavy cream or buttermilk (Use either heavy cream or buttermilk)
- 1 Egg (For egg wash; mixed with milk)
- 2 tbsp Milk (For egg wash; mix with the egg)
Steps
- 1
Heat the olive oil in a skillet over medium heat. Add the diced onions and a pinch of salt. Cook for 5 minutes, until translucent.
- 2
Reduce the heat to medium-low. Continue cooking the onions, stirring often, for 35–40 minutes, until caramelized. Add a little more olive oil if they start to stick; the additional amount is not specified.
- 3
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and set it aside.
- 4
In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, kosher salt, and black pepper.
- 5
Add the cubed butter. Pinch it into the flour mixture with your fingers, continuing until only small pieces remain.
- 6
Add the Gruyère, thyme, and caramelized onions. Pour in the heavy cream or buttermilk and mix until a crumbly dough forms.
- 7
Turn the dough onto a work surface and knead it together. Fold it in half one or two times to help create layers.
- 8
Shape the dough into a 6-inch circle about 1 inch tall. Cut it into 6 scones and place them on the prepared baking sheet.
- 9
Mix the egg and milk together for the egg wash, then brush it over the tops of the scones.
- 10
Bake for 24–26 minutes, until the scones are golden brown.
- 11
Let the scones cool slightly and enjoy them warm, while the cheese is melty.
Notes
The recipe lists heavy cream or buttermilk as alternatives. The extra olive oil used if the onions stick is unmeasured.
