Viral Dumpling Lasagna

- 12 dumpling wrappers (or wonton pastry; 12-15 pieces)
- 2 tbsp water (for the ramekin)
- 300 g pork mince (freshly ground preferred)
- 1 green onion (chopped)
- 1 clove garlic (minced)
- 1 tsp fresh ginger (minced)
- 1 tbsp cornstarch
- 1 tbsp soy sauce
- 0.5 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp mirin (or Shaoxing wine)
- salt and pepper (to taste)
- 2 tbsp cold water (for the filling)

In a medium mixing bowl, combine the pork mince, chopped green onion, minced garlic, minced ginger, cornstarch, soy sauce, dark soy sauce, oyster sauce, sesame oil, and mirin (or Shaoxing wine).

Add 2 tablespoons of cold water to the meat mixture and season with salt and pepper to taste. Mix vigorously in one direction until the filling becomes slightly sticky and well-emulsified.

Prepare a large ramekin or small heat-proof baking dish by adding 2 tablespoons of water to the bottom.

Begin layering the lasagna: Place a dumpling wrapper at the bottom of the ramekin, then spread a thin, even layer of the pork filling on top.

Repeat the layering process with the remaining wrappers and filling until the ramekin is full, finishing with a wrapper on top.

Place the ramekin in a steamer basket over boiling water. Cover and steam for approximately 15 minutes, or until the pork is fully cooked through and the wrappers are translucent and tender.

Carefully remove the ramekin from the steamer and let it rest for a minute before serving.
Notes
For the best texture, the author recommends mincing your own pork at home. If you don't have a steamer, you can place the ramekin in a larger baking dish with a water bath (bain-marie) in the oven, though steaming is the primary method suggested.
