Almond Croissant Baked Oats

Ingredients
- 220 g rolled oats
- 160 g apple sauce (or 2 ripe bananas, mashed)
- 60 g protein powder (or substitute with oat flour)
- 400 ml milk of choice (up to 425ml)
- 1.5 tsp baking powder
- 1 tsp almond extract
- 2 tbsp ground almonds
- 1 tbsp maple syrup (or honey)
- 50 g almond butter
- 40 g flaked almonds
- icing sugar (to sprinkle (optional))

Preheat the oven to 180°C fan (350°F).

Grease a baking dish with a little oil or butter.

In the greased baking dish, combine the rolled oats, apple sauce (or mashed bananas), protein powder (or oat flour), milk, baking powder, and almond extract. Mix well until thoroughly combined.

In a separate small bowl, mix together the ground almonds, maple syrup (or honey), and almond butter until a paste forms.

Spoon the almond butter mixture over the top of the oat base and spread it evenly.

Finish by sprinkling the flaked almonds over the top.

Bake for 35–40 minutes, until the oats are set and the top is lightly golden.

Allow the dish to cool for at least 15 minutes before serving.

Sprinkle with icing sugar if using. For clean slices, leave to cool completely (around 2 hours) before cutting.
Notes
Keeps well in the fridge for 3–4 days. Serve with Greek yogurt and an extra drizzle of almond butter for a balanced meal.
