Weights are estimates. Together, the ingredients weigh about 1.41 kg before cooking, which is about 120 g per serving.
Steps
Melt the unsalted butter. In a large mixing bowl, combine the melted butter, granulated sugar, and golden brown sugar with an electric hand mixer on medium-low speed for about 1 minute.
Add the vanilla extract and large eggs. Mix on medium speed until incorporated.
In a separate bowl, mash the four medium-sized ripe bananas, then add the mashed bananas to the muffin batter.
Sift together the all-purpose flour, baking soda, and salt in that order. Add the sifted dry ingredients to the banana batter and mix until combined.
Add the chopped walnuts and semisweet chocolate chips. Fold them into the batter with a spatula.
Line a muffin tin with cupcake liners. Divide the batter among the liners, filling each muffin full; the recipe yields about 12–13 full muffins.
Sprinkle additional chocolate chips over the tops of the muffins as desired.
Bake at 350°F (180 °C) for 20–24 minutes, until the muffins are baked through.
Notes
For storage, let the muffins cool completely, then place them in an airtight container with a paper towel over them. They keep for about a week in the refrigerator or at room temperature. To freeze, place cooled muffins in an airtight container for up to 3 months; thaw overnight in the refrigerator and warm in the microwave for about 30 seconds. Optional variations mentioned by the source include adding cacao powder, using white, dark, or milk chocolate chips, substituting 1:1 gluten-free baking flour with dairy-free butter and chocolate chips, and omitting the walnuts for a nut-free version.
