Steps
Peel and chop the potatoes into uniform chunks. Place them in a large pot of salted water and bring to a boil. Cook for 15-20 minutes or until fork-tender.
While potatoes are boiling, dice the chicken breast into bite-sized pieces.
In a bowl, toss the chicken pieces with cornstarch, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.
Air fry the chicken at 400°F (200 °C) (200°C (400 °F)) for 12-15 minutes, shaking halfway through, until crispy and cooked through to an internal temperature of 165°F (74 °C).
Drain the cooked potatoes and return them to the pot. Add the light butter and skim milk, then mash until smooth and creamy. Season with additional salt and pepper if desired.
Heat the canned corn in a small saucepan or microwave until warmed through.
Prepare the low-calorie gravy according to package instructions until thickened.
To assemble the meal prep bowls, divide the mashed potatoes equally into 4 containers.
Top each portion of potatoes with a layer of corn, followed by the crispy chicken pieces.
Drizzle the gravy over the chicken and sprinkle each bowl with 15g of shredded cheddar cheese.
Notes
To reheat, microwave for 2 minutes. The cheese will melt perfectly over the chicken and gravy. For extra crunch, you can spray the chicken with a little oil before air frying.
