Ingredients

  • 250 g beef (thinly sliced; 200-300g range provided)
  • 1 tbsp Mingle Seasoning Korean BBQ
  • 1.5 tbsp soy sauce (1-2 tbsp range provided)
  • 1 tbsp sesame oil (for marinade)
  • 1 cup uncooked rice
  • 0.75 cup water (or stock)
  • 1 tsp chicken stock powder
  • 1 carrot (medium, julienned)
  • 1 zucchini (small, julienned)
  • 200 g shiitake mushrooms (sliced)
  • spinach leaves (handful)
  • bean sprouts (handful)
  • 1 tbsp gochujang (optional sauce component)
  • 1 tbsp sesame oil (for optional sauce)
  • 1 tbsp rice wine vinegar (optional sauce component)
  • 0.5 tsp honey (or sugar; optional sauce component)
  • 2 egg (fried; for serving)
  • Mingle Seasoning Everything Bagel (for serving)
  • spring onion (sliced; for serving)

Steps

    Soak the rice in water while you prepare the remaining ingredients.

    Combine the thinly sliced beef with Mingle Seasoning Korean BBQ, soy sauce, and sesame oil in a bowl. Toss to coat thoroughly and set aside to marinate.

    Drain and rinse the soaked rice until the water runs clear.

    Add the rinsed rice to the rice cooker along with 3/4 cup water (or stock) and the stock powder.

    Arrange the marinated beef over the rice, then layer on the julienned carrot, julienned zucchini, sliced shiitake mushrooms, spinach leaves, and bean sprouts.

    Close the lid and cook using the standard white rice setting (this usually takes around 20 minutes, depending on your rice cooker).

    While the rice cooks, whisk together the gochujang, sesame oil, rice wine vinegar, and honey (if using) in a small bowl. Add a splash of water if needed to thin the sauce to your desired consistency.

    Once the cooking cycle is complete, you may add an extra handful of fresh spinach or bean sprouts if desired; the residual heat will gently wilt them.

    Gently mix everything together in the rice cooker pot to distribute the beef and vegetables.

    Serve the bibimbap topped with a fried egg, a sprinkle of Everything Bagel seasoning, sliced spring onions, and a drizzle of the prepared gochujang sauce.

Notes

You can substitute the beef with your protein of choice. The residual heat in the rice cooker is sufficient to wilt delicate greens like spinach and sprouts after the main cooking cycle is finished.
