Ingredients
- 3 lb yuca (boiled in plenty of salted water until soft)
- 45 g butter (approximately 3 tbsp)
- 4 oz cream cheese (Philadelphia style)
- 2 tbsp heavy cream
- 1 tsp thyme (optional)
- 8 oz mozzarella cheese (shredded for topping)
- yuca cooking water (a splash if necessary to adjust the consistency)
Steps
- 1
Boil the yuca in plenty of salted water until super soft. Drain, reserving some of the cooking water.
- 2
Place the boiled yuca in a mixer (hand or stand mixer) or a food processor.
- 3
Add the butter, cream cheese, heavy cream, and thyme to the yuca.
- 4
Beat or process until the mixture is as creamy as you desire. If you prefer a lighter consistency, add a splash of the water in which the yuca was cooked.
- 5
Transfer the mash to an oven-safe dish and spread it evenly.
- 6
Cover the entire surface with the shredded mozzarella cheese (measured with your heart).
- 7
Place in an oven preheated to 175°C (350°F) and bake until the cheese is golden brown, approximately 20 to 30 minutes.
Notes
The author recommends using a mixer instead of a food processor if you prefer to maintain some of the natural texture of the yuca. Using a blender is not recommended as it requires too much liquid and the final texture may become too watery.
