Ingredients

  • 1 cup Basmati rice (rinsed and soaked for 20 minutes)
  • 2 tbsp Ghee (or oil)
  • 1 tsp Cumin seeds (jeera)
  • 1 Onion (medium, thinly sliced)
  • 1 tsp Ginger garlic paste (freshly made)
  • 2 Green chilies (slit)
  • 1.5 cup Mixed vegetables (carrots, peas, beans, potatoes)
  • 0.5 tsp Garam masala
  • 2 cup Water
  • Salt (to taste)

Steps

    Rinse 1 cup of Basmati rice until the water runs clear, then soak it in water for at least 20 minutes. Drain completely before use.

    Heat 2 tablespoons of ghee or oil in a heavy-bottomed pot or pressure cooker over medium heat.

    Add 1 teaspoon of cumin seeds and let them sizzle until fragrant.

    Add the sliced onions and slit green chilies. Sauté until the onions turn translucent and slightly golden.

    Stir in 1 teaspoon of ginger garlic paste and sauté for 1 minute until the raw smell disappears.

    Add 1.5 cups of mixed vegetables and sauté for 2-3 minutes.

    Bring to a boil, then reduce heat to low, cover with a tight lid, and simmer for 10-12 minutes until the water is absorbed and rice is fluffy.

    Turn off the heat and let the rice rest, covered, for 5 minutes before fluffing with a fork and serving.
