Mojo Rojo with Cheat’s Lemon Potatoes
A vibrant Canary Islands roasted red pepper dip blended with olive oil, vinegar, paprika, cumin, and garlic. Serve it with crispy fries tossed in lemon juice, salt, and dried herbs, or use it as a sauce for other dishes.

Ingredients
- 1 red bell pepper (Halved and deseeded)
- 2 cloves garlic
- olive oil for roasting (Drizzle over the pepper and garlic)
- 3 tbsp olive oil (For blending)
- 1.5 tbsp white wine or red wine vinegar (Use 1 to 2 tablespoons, to taste)
- 1 tsp paprika
- 1 tsp ground cumin
- salt (To taste)
- favorite fries (Amount as desired; the creator air-fried hers)
- lemon juice (To taste, for tossing with the fries)
- dried herbs (To taste)
- salt for fries (To taste)

Preheat the oven to 400°F (200°C). If using an air fryer instead, prepare it according to the manufacturer’s directions.

Place the halved, deseeded red pepper and garlic cloves on a baking tray. Drizzle with olive oil, coating the pepper lightly.

Roast for about 25 minutes, until the pepper is tender and visibly softened. Alternatively, air-fry for about 15 minutes.

Remove the roasted pepper and garlic and let them cool enough to handle. Peel away the pepper’s skin.

Transfer the peeled pepper and roasted garlic to a food processor or blender.

Add the olive oil, vinegar, paprika, cumin, and salt. Start with 1 tablespoon of vinegar and add more if desired.

Blend until completely smooth and creamy, scraping down the sides if needed. Taste and adjust the salt or vinegar.

Prepare your favorite fries, preferably by air-frying or cooking them until crisp according to their package or recipe directions.

While the fries are hot, toss them with lemon juice, salt, and dried herbs.

Serve the lemon potatoes immediately with the Mojo Rojo dip. The dip may also be served with other foods.
