Ingredients

  • 1.5 cup cooked maitake mushrooms
  • 0.333 cup oat flour
  • 1.5 cup canned black beans (Rinsed and drained)
  • 0.25 cup refined coconut oil
  • 2 tbsp vegetable broth
  • 1 tbsp tomato paste
  • 0.5 tbsp white miso
  • 0.333 cup Worcestershire sauce
  • 0.5 cup grilled white onion (Roughly chopped; roasted onions are specified in the method)
  • 2.5 roasted garlic (2–3 cloves)
  • 0.667 cup vital wheat gluten (Add more if the final mixture is too wet)
  • 1 tbsp steak seasoning
  • 4 sesame bun (For serving)
  • truffle vegan mayo (Or mayo of choice; quantity not specified)
  • truffle ketchup (Or regular ketchup; quantity not specified)
  • iceberg lettuce (Quantity not specified)
  • tomato (Thinly sliced; quantity not specified)
  • white onion (Sliced; quantity not specified)
  • dill pickles (Sliced; quantity not specified)
  • oil (For lightly brushing patties before grilling)

Steps

  1. 1

Add the cooked maitake mushrooms to a dry cast-iron pan. Press them with a pan or press until the liquid is expelled, then flip and repeat; continue until the edges are slightly crispy.

  2. 2

Put the roasted onions, roasted garlic, white miso, tomato paste, coconut oil, vegetable broth, Worcestershire sauce, and steak seasoning into a food processor. Blend until smooth.

  3. 3

Add the cooked maitake mushrooms to the food processor and pulse a few times, keeping the mixture chunky.

  4. 4

In a large bowl, mash the black beans until mostly smooth but still slightly chunky.

  5. 5

Add the mushroom mixture, oat flour, and vital wheat gluten to the bowl of mashed beans.

  6. 6

Knead the mixture by hand for 2–3 minutes, until elastic and able to hold together. If the final mixture is too wet, add more vital wheat gluten.

  7. 7

Divide the mixture into equal portions and shape each portion into a patty.

  8. 8

Wrap the patties in foil or parchment and steam for 1 hour. Make sure the vital wheat gluten is cooked all the way through.

  9. 9

Refrigerate the steamed patties for at least 30–45 minutes, or overnight, so the gluten can hydrate and firm up.

  10. 10

Lightly brush the patties with oil. Grill for about 5 minutes per side, until charred and cooked through.

  11. 11

Serve the patties on sesame buns with truffle vegan mayo or mayo of choice, truffle ketchup or regular ketchup, iceberg lettuce, thinly sliced tomato, sliced white onion, and sliced dill pickles.

Notes

The source lists optional mushroom bacon but provides no ingredients or preparation instructions for it. It also does not specify how many patties the mixture makes; servings are estimated as four burgers.
