Ingredients

  • 80 g onions (quartered)
  • 30 g unsalted butter (diced)
  • 500 g frozen green peas
  • 500 g water
  • 0.5 tsp fine sea salt
  • ground black pepper (2 - 3 pinches, to taste)
  • 1 vegetable stock cube (for 0.5 l, crumbled; or 1 heaped tsp vegetable stock paste)
  • 10 g fresh mint leaves (plus extra for garnishing)

Steps

  1. 1

Place quartered onions into the mixing bowl and chop for 3 seconds at speed 5.

  2. 2

Scrape down the sides of the mixing bowl with the spatula.

  3. 3

Add the diced unsalted butter and sauté for 3 minutes at 120°C (or Varoma temperature) on speed 1.

  4. 4

Add the frozen green peas, water, fine sea salt, ground black pepper, and the crumbled vegetable stock cube.

  5. 5

Cook the mixture for 13 minutes at 100°C on speed 1.

  6. 6

Add the fresh mint leaves to the mixing bowl.

  7. 7

Blend the soup for 1 minute, gradually increasing the speed from 5 to 10.

  8. 8

Serve the soup hot, garnished with extra fresh mint leaves if desired.

Notes

You can substitute the vegetable stock cube with 1 heaped teaspoon of homemade vegetable stock paste. For a smoother finish, ensure you increase the blending speed slowly to the maximum setting.
