Vietnamese-Style Pork Ribs

Ingredients
- 1.5 kg Pork ribs (back ribs) (Preferably meaty)
- 1 tbsp Salt (For cleaning the meat)
- 2 Shallot (Crushed)
- 3 cloves Garlic (Crushed)
- 2 stalks Scallions (White part only, crushed)
- 1 tbsp Dark soy sauce
- 2 tbsp Soy sauce
- 1 tbsp Oyster sauce
- 1 tbsp Fish sauce
- 1 tbsp Garlic powder
- 1 tbsp Onion powder
- 1 tbsp Sugar
- 0.5 tsp MSG (Monosodium glutamate) (Optional)
- 0.5 tsp Black pepper
- 1.5 tbsp Chicken bouillon powder
- 2 tbsp Garlic oil (Or regular vegetable oil)
- 1 tbsp Hot sauce (Chinsu brand or your choice)

Clean the pork ribs by rubbing them with a tablespoon of salt and rinsing with water. Pat them dry thoroughly with paper towels.

In a mortar or small bowl, mash the shallots, garlic cloves, and the white part of the scallions until a coarse paste forms.

Prepare the marinade sauce by mixing the aromatic paste with the dark soy sauce, regular soy sauce, oyster sauce, and fish sauce.

Add the garlic powder, onion powder, sugar, MSG (if using), black pepper, and chicken bouillon powder to the liquid mixture.

Stir in the garlic oil and hot sauce, mixing well until all ingredients are fully combined.

Pour the marinade over the pork ribs, ensuring each piece is completely coated.

Cover and refrigerate the ribs to marinate overnight (or for at least 8 hours) for the best flavor.

Grill or bake until the meat is tender and slightly caramelized on the outside.
Notes
For best results, use meaty ribs. If you don't have garlic oil, you can heat vegetable oil with a bit of minced garlic until fragrant and use it once cooled.
