Ingredients

  • oil (for greasing)
  • 500 g tapioca roots (peeled and cut in chunks)
  • 120 g brown sugar
  • 880 g water (divided)
  • 100 g coconut milk
  • 1 tsp salt
  • 3 pandan leaves (cut in 5 cm length)
  • grated fresh coconut (to garnish)

Steps

  1. 1

Grease a steaming tray or cake tin with a little bit of oil and set aside.

  2. 2

Place the peeled and chunked tapioca roots into the Thermomix mixing bowl.

  3. 3

Add the brown sugar, 80g of the water, coconut milk, and salt to the mixing bowl.

  4. 4

Blend the mixture until smooth (typically Speed 10 in a Thermomix).

  5. 5

Pour the tapioca mixture into the prepared greased tray and place the cut pandan leaves on top.

  6. 6

Clean the mixing bowl and add the remaining 800g of water.

  7. 7

Set the Varoma or steaming attachment in place with the tray inside.

  8. 8

Steam for approximately 30-40 minutes until the kuih is translucent and cooked through.

  9. 9

Remove the kuih from the steamer and let it cool completely before cutting into pieces.

  10. 10

Coat the pieces with grated fresh coconut before serving.

Notes

Ensure the tapioca is peeled thoroughly to remove the woody outer skin. The kuih must be completely cooled before slicing to ensure clean edges.
