Ingredients

  • 1000 g lean beef strips (or sliced beef)
  • 60 g soy sauce
  • 40 g nashi pear (grated)
  • 25 g stevia
  • 20 g rice vinegar
  • 20 g garlic powder
  • 10 g sesame oil
  • 5 g ginger (grated)
  • 5 g black pepper
  • 750 g brown rice (cooked (150g per serving))
  • 1 onion (diced)
  • 300 g corn kernels (1 can, drained)
  • 250 g mushrooms (diced)
  • 20 g light butter (4g per serving)
  • extra black pepper (to taste)

Steps

    In a large bowl, combine the soy sauce, grated nashi pear, stevia, rice vinegar, garlic powder, sesame oil, grated ginger, and 5g of black pepper.

    Add the lean beef strips to the marinade and mix well to ensure all pieces are coated. Let the beef marinate for at least 30 minutes.

    Lightly spray a large pan with oil and heat over medium-high heat.

    Pan fry the diced onion, diced mushrooms, and drained corn kernels. You can cook them separately or all together until they are softened and slightly browned.

    Remove the vegetables from the pan and set aside.

    In the same pan, cook the marinated beef on high heat in batches. Do not overcrowd the pan to ensure the beef caramelizes properly rather than steaming.

    To assemble, divide the cooked brown rice, sautéed vegetables, and caramelized beef into 5 meal prep containers.

    Top each serving with a small cube (4g) of light butter and a final crack of extra black pepper.
