Ingredients

  • 2 can Canned Tuna (drained, approximately 5-6 oz each)
  • 0.25 cup Red Onion (finely diced)
  • 1 stalk Celery (finely chopped)
  • 0.5 cup Cucumber (diced)
  • 0.25 cup Greek Yogurt (plain; used as a healthy alternative to mayo)
  • 1 tbsp Mayonnaise (optional for extra creaminess)
  • 1 tbsp Lemon Juice (freshly squeezed)
  • 1 tsp Dijon Mustard
  • Salt (to taste)
  • Black Pepper (to taste)
  • 1 tbsp Fresh Parsley (chopped)

Steps

    Drain the liquid from the canned tuna and place the tuna into a medium mixing bowl.

    Flake the tuna with a fork until it is broken into small, even pieces.

    Add the finely diced red onion, chopped celery, and diced cucumber to the bowl with the tuna.

    In a small separate bowl or directly into the main bowl, add the Greek yogurt, mayonnaise (if using), lemon juice, and Dijon mustard.

    Season the mixture with salt and black pepper to taste.

    Add the fresh chopped parsley to the bowl.

    Stir all the ingredients together until the tuna and vegetables are thoroughly coated in the dressing.

Notes

For those who do not eat fish, cooked shredded chicken breast can be used as a substitute for the tuna. If you want to avoid yogurt, you can use all mayonnaise or a mashed avocado for a dairy-free creamy base.
