S'mores Cookie Bars
These s'mores cookie bars feature a chewy graham cracker cookie dough base, a layer of solid chocolate bars, and gooey marshmallow fluff, all topped with more cookie dough.

Ingredients
- 0.5 cup Butter (softened)
- 0.5 cup Brown sugar (packed)
- 0.25 cup Granulated sugar
- 1 Egg (large, room temperature)
- 1 tsp Vanilla extract
- 1.5 cup All-purpose flour
- 1 cup Graham cracker crumbs
- 0.5 tsp Baking soda
- 0.25 tsp Salt
- 3 oz Milk chocolate bars (full-on chocolate bars, e.g., Hershey's)
- 7 oz Marshmallow fluff (one jar or a big scoop)

Preheat your oven to 350°F (175°C) and grease an 8x8 inch square baking pan or line it with parchment paper.

In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract until well combined.

In a separate bowl, whisk together the flour, graham cracker crumbs, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

Divide the dough in half. Press one half of the dough into the bottom of the prepared baking pan to form an even layer.

Place the chocolate bars side-by-side over the cookie dough layer until the surface is covered.

Spread a thick layer of marshmallow fluff over the chocolate bars.

Take the remaining cookie dough and flatten small pieces of it with your hands, placing them over the marshmallow fluff until the top is mostly covered.

Bake for 25-30 minutes, or until the top is golden brown.

Allow the bars to cool completely in the pan before slicing to ensure the marshmallow and chocolate have set.
Notes
For a cleaner cut, chill the bars in the fridge for 30 minutes before slicing. You can substitute chocolate chips for the chocolate bars if needed, but the bars provide a more traditional s'mores texture.
