Ingredients

  • 2 garlic (whole bulbs, peeled)
  • 0.5 cup olive oil (used for roasting the garlic)
  • 2 tbsp butter (added during blending)
  • 1 tbsp tomato paste
  • 3 tbsp parmesan cheese (plus extra for garnish)
  • fresh basil (a little bit, chopped)
  • 8 oz spaghetti
  • chili flakes (optional, to taste)

Steps

    Peel the garlic by placing two bulbs in a container, heating them in the microwave for 15 seconds, and then shaking the container vigorously until the skins fall off.

    Place the peeled garlic cloves in a small pot or skillet with 1/2 cup of olive oil.

    Cook the garlic in the oil over low to medium heat for approximately 20 minutes until the cloves are golden brown and soft.

    Transfer the roasted garlic and the oil into a blender.

    Add a little bit of butter to the blender and blend until the mixture is smooth.

    Add 1 tablespoon of tomato paste, 3 tablespoons of parmesan cheese, and a little bit of fresh basil to the garlic mixture and mix well to create the sauce.

    Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.

    Drain the pasta and return it to the pot or a mixing bowl.

    Pour the garlic sauce over the pasta and toss until every strand is thoroughly coated.

    Serve immediately, topped with additional parmesan cheese and chili flakes if desired.

Notes

The author suggests adding chili flakes for heat, though they were omitted in the video. The microwave trick for peeling garlic works best when the garlic is shaken vigorously in a closed container.
