Ingredients

  • Sunflower oil or butter (for frying)
  • 1 jar Nduja (a whole small jar (typically 180-200g))
  • 5 Eggs
  • Salt (to taste)
  • Black pepper (to taste)
  • Parmesan cheese (freshly grated, to taste)
  • Fresh parsley (finely chopped)
  • Chives (finely chopped)
  • 1 Turkish bread (served in pieces for dipping)

Steps

    Heat a pan over medium-high heat and add a splash of sunflower oil or a knob of butter.

    Add the entire jar of Nduja to the pan. Spread it out evenly and allow it to melt into the oil.

    Crack the 5 eggs directly into the pan over the melted Nduja. Season with salt and pepper to taste.

    Cover the pan with a lid and let everything cook gently on medium-high heat for about 5 minutes, or until the whites are set but the yolks are still runny.

    While the eggs are cooking, finely chop the fresh parsley and chives.

    Remove the lid from the pan. Grate some fresh Parmesan cheese over the top and sprinkle with the chopped parsley and chives.

    Serve the Nduja eggs immediately with pieces of Turkish bread, perfect for dipping into the spicy oil and egg yolks.

Notes

Nduja is a spicy, spreadable pork sausage from Calabria; its high fat content allows it to melt into a sauce-like consistency when heated. If you prefer firmer yolks, leave the lid on for an extra minute.
