  • 2 globe eggplants (About 1½ pounds total; partially peel in lengthwise strips, leaving alternating bands of skin, then halve lengthwise)
  • 3 tbsp extra-virgin olive oil (Plus more for brushing the eggplant and grill grates)

Steps

    Prepare a charcoal or gas grill for medium-high heat, about 400–450°F (200–230°C). Clean and lightly oil the grates.

    Partially peel the eggplants by removing strips of skin lengthwise with a vegetable peeler, leaving a striped pattern. Halve the eggplants lengthwise and brush the cut sides and skin lightly with olive oil. Season generously with kosher salt and black pepper.

    Place the eggplant cut-side down on the grill. Cook for about 8–10 minutes, without moving, until the cut surfaces are deeply browned and have clear grill marks.
