- 375 ml all-purpose flour
- 125 ml flaxseeds (ground for better nutrition)
- 250 ml milk (or soy beverage)
- 125 ml sugar
- 60 ml plain yogurt
- 30 ml canola oil
- 1 egg (large)
- 2 apples (peeled, cored, and finely chopped or grated)
- 1 carrot (grated)
- 15 ml baking powder
- 5 ml cinnamon
- salt (1 pinch)

Preheat oven to 190°C (375°F). Grease a 12-cup muffin tin or line with paper liners.

In a large bowl, whisk together the dry ingredients: all-purpose flour, flaxseeds (preferably ground), sugar, baking powder, cinnamon, and a pinch of salt.

In another bowl, lightly beat the egg. Add the milk (or soy beverage), plain yogurt, and canola oil. Mix well.

Fold the chopped or grated apples and grated carrot into the liquid mixture.

Pour the wet ingredients over the dry ingredients. Mix gently until the flour is just moistened (do not overmix to maintain a tender texture).

Divide the batter evenly among the 12 muffin cups.

Bake for about 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Let cool for a few minutes in the tin before removing and placing on a wire rack.
Notes
Flaxseed is a local and more affordable alternative to chia seeds. Flaxseeds must be ground to be nutritional. You can add dried cranberries for variety. Seeds should be stored in the refrigerator or freezer.
