Ingredients

  • 4 carrots (cut into large chunks)
  • 1 sweet onion (chopped)
  • 4 boneless skinless chicken breasts (thinner cut)
  • 2 tbsp olive oil (for coating)
  • salt (to taste)
  • black pepper (to taste, plus extra for sauce)
  • garlic powder (generous amount)
  • paprika (generous amount)
  • honey mustard seasoning (optional (e.g., Kinder's))
  • 3 tbsp water (cold)
  • 3 tbsp cornstarch (equal parts to water)
  • 2 cup chicken stock
  • 3 tbsp honey
  • 2 tbsp Dijon mustard
  • fresh thyme (several sprigs)

Steps

    Preheat your oven to 400°F (200°C).

    Prep the vegetables by cutting 4 carrots into large chunks and chopping 1 sweet onion.

    In a large mixing bowl, combine the 4 chicken breasts, chopped carrots, and onions.

    Drizzle the chicken and vegetables with olive oil.

    Season generously with salt, black pepper, garlic powder, and paprika. Add honey mustard seasoning if using. Toss everything together until the chicken and vegetables are thoroughly coated.

    Transfer the seasoned chicken and vegetables into a large baking dish, spreading them out into an even layer.

    In a separate small bowl, whisk together 3 tablespoons of cold water and 3 tablespoons of cornstarch until smooth to create a slurry.

    Add 2 cups of chicken stock, 3 tablespoons of honey, 2 tablespoons of Dijon mustard, and a pinch of black pepper to the cornstarch slurry. Whisk until well combined.

Notes

The cornstarch slurry is essential for thickening the sauce as it bakes. If you don't have honey mustard seasoning, the homemade sauce provides plenty of flavor. Ensure the chicken breasts are of similar thickness for even cooking.
