Ingredients
- 1 cup Good Culture cottage cheese (blended until creamy)
- 1 scoop chocolate protein powder
- 2 tbsp Nestle cocoa powder
- 2 tbsp powdered peanut butter
- 1.5 tbsp honey (1-2 tbsp; can substitute with stevia)
- salt (a pinch)
- 4 tbsp oat flour (added to reach dough-like consistency)
- 0.5 cup dark chocolate (for melting)
- 1 tsp coconut oil (helps the chocolate not harden too quickly)
- flaky salt (for topping)
Steps
- 1
Add 1 cup of cottage cheese to a blender and blend until it is completely creamy and looks like frothy cream.
- 2
Pour the blended cottage cheese into a mixing bowl.
- 3
Add one scoop of chocolate protein powder, 2 tablespoons of cocoa powder, 2 tablespoons of powdered peanut butter, 1 to 2 tablespoons of honey (or stevia), and a pinch of salt to the bowl.
- 4
Stir the mixture until combined. If it is not thick enough, add approximately 4 tablespoons of oat flour until it reaches a dough-like consistency.
- 5
Roll the dough into balls using your hands and place them on a parchment-lined sheet.
- 6
Pop the balls into the freezer for about 15 minutes to firm up.
- 7
While the balls are freezing, combine dark chocolate and a little bit of coconut oil in a microwave-safe bowl.
- 8
Microwave the chocolate in short intervals, stirring in between, until fully melted and smooth.
- 9
Remove the balls from the freezer. Drop each ball into the melted chocolate to coat, then place them back onto the sheet.
- 10
Sprinkle a little flaky salt on top of each chocolate-covered ball.
- 11
Return the balls to the freezer until the chocolate coating has hardened.
Notes
The creator emphasizes using Good Culture cottage cheese for its creamy texture. If you prefer a lower calorie option, stevia can be used in place of honey. The oat flour is essential for getting the right 'dough' texture that can be rolled into balls.
