Food Court Bourbon Chicken

Ingredients
- 1.5 lb chicken thighs (boneless and skinless, chopped into bite-sized pieces)
- 2 tbsp butter
- 0.33 cup hoisin sauce
- 0.33 cup soy sauce
- 0.25 cup brown sugar (packed)
- 1 tbsp garlic (minced)
- 1 tsp ginger (minced or ground)
- 2 tbsp bourbon (a few splashes)

Heat a cast iron skillet over medium-high heat. Add the chicken pieces and sear until they are approximately 90% cooked and have a nice golden-brown crust.

Remove the chicken from the pan and chop it up into smaller, bite-sized pieces if not already done.

In the same pan, add the butter, hoisin sauce, soy sauce, brown sugar, minced garlic, and ginger.

Stir the sauce ingredients together over medium heat until the butter is melted and the sugar has dissolved.

Add the chicken back into the pan along with a few splashes of bourbon.

Reduce the heat to low and let the mixture simmer for about 20 minutes, allowing the sauce to thicken and coat the chicken thoroughly.
Notes
Using a cast iron skillet is recommended for the best sear on the chicken. The author notes that fresh ginger and fresh minced garlic are preferred if available.
