Ingredients

  • 5 tbsp unsalted butter
  • 1 onion (large, chopped)
  • 1.25 tsp table salt (divided)
  • cayenne pepper (pinch (optional))
  • 6 cup cooked basmati rice (preferably day-old)
  • 8 oz hot-smoked salmon (broken into 1-inch flakes)
  • 6 hard-cooked large eggs (peeled and grated using large holes of a box grater)
  • 0.333 cup fresh parsley (chopped)
  • 0.333 cup fresh chives (chopped)
  • 5 tbsp lemon juice (from about 2 lemons)
  • 0.5 tsp black pepper

Steps

    Melt 5 tablespoons of unsalted butter in a 12-inch nonstick skillet over medium-low heat.

    Add the chopped onion, 1/4 teaspoon of salt, and a pinch of cayenne (if using).

    Cook, stirring occasionally, until the onion is soft but not browned, about 10 to 12 minutes.

    Add 6 cups of cooked basmati rice and the remaining 1 teaspoon of salt to the skillet.

    Increase the heat to medium-high and cook, stirring frequently to break up any clumps and coat the rice thoroughly with butter, until the rice is heated through, about 10 minutes.

    Add 8 ounces of flaked hot-smoked salmon to the rice mixture.

    Cook, stirring frequently, until the salmon is heated through, about 5 minutes.

    Transfer the rice and salmon mixture to a large bowl.

    Add the grated eggs, chopped parsley, chopped chives, 5 tablespoons of lemon juice, and 1/2 teaspoon of pepper to the bowl.

    Toss the mixture gently to combine and season with additional salt to taste.

    Transfer the kedgeree to a serving platter and serve immediately, passing lemon wedges separately.

Notes

This recipe works best with day-old rice so the grains remain distinct. If making fresh rice, cook it a couple of hours ahead, spread it on a rimmed baking sheet to cool completely, and chill for 30 minutes before using. Use the large holes of a box grater for the eggs to add richness and color to the dish.
