Ingredients
- 3 yellow onions (large, thinly sliced)
- 4 tbsp unsalted butter (for caramelizing onions)
- 0.25 cup beef broth (to deglaze the pan)
- 1 tsp fresh thyme (minced)
- 1 lb pizza dough or brioche dough (store-bought or homemade)
- 1.5 cup Gruyère cheese (shredded, divided)
- 1 egg (beaten for egg wash)
- salt and black pepper (to taste)
Steps
- 1
In a large skillet over medium heat, melt the butter. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are deep golden brown and caramelized, about 30-40 minutes. If the pan gets too dry, add a splash of water or beef broth to scrape up the browned bits.
- 2
Once the onions are caramelized, stir in the minced thyme and the 1/4 cup of beef broth. Simmer until the liquid has evaporated. Remove from heat and let the mixture cool completely.
- 3
Preheat your oven to 375°F (190°C) and grease a baking dish or line a sheet pan with parchment paper.
- 4
On a lightly floured surface, roll out your dough into a large rectangle (approximately 12x18 inches).
- 5
Spread the cooled caramelized onion mixture evenly over the dough, leaving a 1-inch border at the edges. Sprinkle 1 cup of the shredded Gruyère cheese over the onions.
- 6
Starting from the long edge, tightly roll the dough into a log. Pinch the seam to seal.
- 7
Using a sharp knife or unflavored dental floss, cut the log into 12 even rolls. Place the rolls cut-side up in the prepared baking dish.
- 8
Cover the rolls with a clean kitchen towel and let them rise in a warm spot for about 30 minutes until slightly puffed.
- 9
Brush the tops of the rolls with the beaten egg wash. Sprinkle the remaining 1/2 cup of Gruyère cheese over the tops.
- 10
Bake for 20-25 minutes, or until the rolls are golden brown and the cheese is bubbly and melted. Serve warm.
