Ingredients

  • 1.5 lb chicken breast (boneless, skinless)
  • 4 cup broccoli (chopped into small florets)
  • 1 onion (diced)
  • 3 clove garlic (minced)
  • 1 cup carrots (shredded or diced)
  • 2 tbsp corn starch (used for thickening)
  • 2 tbsp butter (unsalted)
  • seasonings (salt, pepper, and Italian seasoning to taste)
  • 4 cup chicken broth (low sodium preferred)
  • 2 cup cheddar cheese (shredded)
  • 0.5 cup heavy cream

Steps

    Place the chicken breast, chopped broccoli, diced onion, minced garlic, and carrots into the slow cooker.

    Add the corn starch, butter, seasonings (salt and pepper), and chicken broth to the slow cooker.

    Cover and cook on high for 2 to 3 hours or on low for 4 to 6 hours.

    Once the cooking time is complete, remove the chicken from the slow cooker.

    Shred the chicken using two forks and stir it back into the slow cooker.

    Add the shredded cheddar cheese and heavy cream to the mixture.

    Stir well and cook for an additional 10 minutes, or until the cheese is completely melted and the soup is creamy.

Notes

For a thicker soup, you can increase the corn starch or mash some of the cooked broccoli florets before adding the cheese. Ensure the cheese is freshly shredded for the best melting consistency.
