- 1 tsp Italian seasoning
- 3 eggs (large)
- 0.5 cup milk
- 0.25 cup olive oil
- 1 tsp garlic powder
- 1 cup whole milk ricotta cheese
- 2 cup fresh spinach (finely chopped; or 1 cup frozen spinach, thawed and well-drained)
- 1.5 cup shredded mozzarella cheese
- 0.5 cup grated Parmesan cheese
- 2 tbsp fresh parsley (chopped)
- 2 tbsp fresh basil (chopped (optional))
- 2 garlic (cloves, minced)
- 0.25 tsp nutmeg (optional)
- salt and black pepper (to taste)
- 0.25 cup shredded mozzarella (for topping)
- 2 tbsp grated Parmesan (for topping)
- Fresh parsley (for garnish)

Preheat the oven to 350°F (175°C).

Grease a 10-inch (25 cm) Bundt pan thoroughly with butter or non-stick cooking spray.

In a large bowl, combine the flour, baking powder, baking soda, salt, pepper, Italian seasoning, and garlic powder. Whisk to ensure even distribution of the leavening agents and spices.

In another bowl, whisk together the eggs, milk, and olive oil until well combined.

Gradually stir the wet ingredients into the dry ingredients until just combined. Do not overmix.

In a separate bowl, mix the ricotta, chopped spinach, 1.5 cups mozzarella, 0.5 cup Parmesan, minced garlic, parsley, basil (if using), nutmeg (if using), and salt and pepper to taste.

Notes
If using frozen spinach, ensure it is completely thawed and squeezed dry to prevent the batter from becoming too watery. The internal temperature cue (200°F) is the best way to ensure the center is fully set given the moisture from the ricotta.
