Creamy Garlic Parmesan Chicken Pasta

Ingredients
- 1 lb chicken breast (cut into bite-sized pieces)
- 12 oz pasta (such as penne or fettuccine)
- 1.5 cup heavy cream
- 1 cup parmesan cheese (freshly grated)
- 4 garlic (cloves, minced)
- 2 tbsp butter
- 1 tbsp olive oil
- salt (to taste)
- black pepper (to taste)
- 2 tbsp fresh parsley (chopped, for garnish)

Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.

While the pasta cooks, season the chicken pieces with salt and pepper.

In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.

In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Pour in the heavy cream and bring to a gentle simmer. Let it cook for 2-3 minutes to slightly thicken.

Stir in the grated parmesan cheese until melted and the sauce is smooth.

Add the cooked chicken and pasta back into the skillet. Toss everything together until the pasta is thoroughly coated in the sauce.

Garnish with fresh parsley and extra parmesan if desired. Serve immediately.
Notes
If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency. For extra flavor, add a pinch of red pepper flakes or Italian seasoning to the sauce.
