Ingredients

  • 2 lb chicken breast (cubed)
  • 2 red onions (chopped)
  • 2 medium sweet potatoes (cut into cubes)
  • 2 jalapeños (sliced)
  • 1 tbsp SpiceX Daily Blend seasoning (or similar garlic-based seasoning)
  • 2 tbsp SpiceX Oh' Cajun seasoning (or similar Cajun seasoning)
  • 3 tbsp Avocado oil
  • 2 cup corn (cooked or canned)
  • 0.5 cup low fat cottage cheese (blended until smooth)
  • 2 tbsp light mayonnaise
  • 3 tbsp cotija cheese
  • 1 lime (juiced and zested)
  • 1.5 jalapeños (finely diced; 1-2 peppers)
  • 2.5 tbsp cilantro (chopped; 2-3 tbsp)
  • 1 avocado (cubed)
  • 1 tsp Tajin (optional)
  • Feta cheese (for topping)
  • Hot honey (for drizzling)

Steps

    Preheat your oven to 400°F (200°C).

    Cut the sweet potatoes into small, uniform cubes. Chop the red onions and cube the chicken breast.

    On a large sheet pan, combine the cubed chicken, chopped red onions, sweet potato cubes, and sliced jalapeños.

    Drizzle with avocado oil and season with the Daily Blend and Oh' Cajun seasonings. Toss everything together until evenly coated.

    Spread the mixture into an even layer and bake for approximately 15 minutes.

    After 15 minutes, remove the pan from the oven. Carefully transfer the chicken pieces to a side plate to prevent them from overcooking and becoming dry.

    Return the pan with the vegetables to the oven and broil for a few additional minutes until the sweet potatoes and onions are tender and slightly charred.

    While the vegetables finish roasting, prepare the salsa. In a medium bowl, combine the corn, blended cottage cheese, light mayonnaise, cotija cheese, lime juice, lime zest, finely diced jalapeños, chopped cilantro, and cubed avocado.

    Stir the salsa ingredients together and add 1 teaspoon of Tajin if desired.

    To serve, portion the roasted chicken and vegetables into bowls. Top with a generous amount of the street corn salsa.

Notes

To make the salsa high protein and creamy, ensure the cottage cheese is blended completely smooth before mixing. If meal prepping, store the salsa separately from the roasted chicken and vegetables to keep the avocado fresh and the texture consistent.
