Ingredients

  • 2 tbsp Butter
  • 2 tbsp Olive oil
  • 1 tbsp Fresh garlic (Freshly minced)
  • 0.25 cup White wine
  • 0.5 tsp Oregano
  • 2 tbsp Lemon juice
  • 0.5 lb Medium shrimp (Peeled and deveined)
  • 1 Ready-made pizza crust (12-inch crust; the source used a Boboli thin crust)
  • 2 cups Italian cheese blend (Shredded and divided; use 1 1/2 cups before baking and 1/2 cup for topping)
  • 0.5 tsp Italian seasoning
  • 0.25 cup Parmesan cheese (Grated)
  • 1 tbsp Fresh parsley (Chopped, for garnish; optional)

Steps

    Preheat the oven to 450°F (230°C).

    Place a skillet over medium-high heat. Add the butter and olive oil and heat until the butter melts.

    Add the freshly minced garlic. Cook, stirring constantly, for about 1 minute, until fragrant but not browned.

    Add the white wine, oregano, and lemon juice. Stir to combine, then simmer for 1 minute so the flavors meld.

    Add the peeled and deveined shrimp. Cook just until the shrimp turn pink and opaque; avoid overcooking so they remain moist.

    Remove the shrimp from the skillet with a slotted spoon and place them on a plate. Set them aside. Remove the skillet from the burner and reserve the scampi juices.

    Place the pizza crust on a baking sheet or pizza pan. Bake the crust by itself for 4 minutes, then remove it from the oven.

    Brush the partially baked crust with about 1/4 cup of the reserved scampi sauce, spreading it evenly without saturating the crust.

    Sprinkle 1 1/2 cups of the shredded Italian cheese blend evenly over the sauce.

    Distribute the cooked shrimp evenly over the cheese.

    Sprinkle the remaining 1/2 cup of shredded Italian cheese blend over the shrimp and cheese layer.

    Sprinkle the Italian seasoning evenly over the pizza.

    Return the pizza to the 450°F oven. Bake for 6–8 minutes, until the cheese is fully melted, bubbly, and lightly golden.

    Remove the pizza from the oven. Sprinkle with the grated Parmesan and chopped fresh parsley, if desired. Slice and serve hot.

Notes
