Ingredients

  • 1 baguette (or long rustic loaf)
  • olive oil (for drizzling)
  • 2 burrata
  • 2 ripe peaches (sliced)
  • hot honey (for drizzling)
  • pistachios (a handful, roughly chopped)
  • fresh basil leaves (chopped)

Steps

  1. 1

Preheat the oven to 200°C (390°F).

  2. 2

Slice the baguette in half lengthwise.

  3. 3

Drizzle both cut sides of the baguette generously with olive oil.

  4. 4

Bake for 6 minutes until the bread is lightly golden and crisp.

  5. 5

Meanwhile, heat a drizzle of olive oil in a frying pan over medium-high heat.

  6. 6

Add the peach slices to the pan and grill for 1–2 minutes per side until they are lightly caramelized.

  7. 7

Spread the burrata cheese evenly over the toasted bread halves.

  8. 8

Arrange the grilled peach slices on top of the burrata.

  9. 9

Drizzle the assembly generously with hot honey.

  10. 10

Finish by sprinkling the chopped pistachios and fresh basil over the top.

  11. 11

Slice the baguette into individual portions and serve immediately.

Notes

Serve immediately while the bread is warm and the peaches are freshly caramelized for the best texture contrast with the cold burrata.
