Ingredients

  • 1 lb ground pork
  • 0.333 cup green onions (thinly sliced)
  • 1 tbsp fresh ginger (grated)
  • 4 garlic (cloves, minced)
  • 1 tbsp oyster sauce
  • 1 tsp black pepper
  • 2 tbsp chili crisp
  • 3 tbsp soy sauce
  • 1.5 tsp sesame oil
  • 1 tbsp rice vinegar
  • 19 dumpling wrappers (Use 18–20 wrappers)
  • 0.25 cup chicken broth
  • avocado oil (For drizzling; use enough to lightly coat the pan and dumplings)
  • soy sauce (For topping)
  • chili crisp (For topping)
  • green onions (For topping, sliced)
  • sesame seeds (For topping)

Steps

  1. 1

In a large mixing bowl, combine the ground pork, sliced green onions, grated ginger, minced garlic, oyster sauce, black pepper, chili crisp, soy sauce, sesame oil, and rice vinegar. Mix thoroughly until the ingredients are evenly distributed and the filling is cohesive.

  2. 2

Use a cookie scoop to portion the pork mixture into mounds on a sheet pan, leaving enough space between the mounds to place and seal the wrappers.

  3. 3

Place one dumpling wrapper over each mound of filling. Pinch the wrapper edges around the filling to seal them, leaving the dumplings in their blanket-like shape.

  4. 4

Drizzle the dumplings and pan lightly with avocado oil. Pour the chicken broth into the pan around the dumplings, avoiding pouring it directly over the wrappers if possible.

  5. 5

Cover the pan tightly and steam the dumplings for 10 minutes, or until the pork is fully cooked and reaches an internal temperature of 160°F (71°C).

  6. 6

Remove the cover carefully, watching for escaping steam. Top the dumplings with soy sauce, chili crisp, sliced green onions, and sesame seeds. Serve immediately with rice on the side.

Notes

The source says the dumplings can be on the table in under 25 minutes. Use a food thermometer to verify that the pork reaches 160°F (71°C). Serve with cooked rice as suggested by the author; rice quantity was not provided.
