Ingredients
- 1.5 cup Almond flour
- 0.5 cup Peanut butter (For the cookie dough base; cashew butter or sunflower seed butter may be substituted.)
- 0.5 cup Maple syrup (The creator used Rx Sugar allulose maple syrup.)
- 0.25 cup Coconut oil (Melted.)
- 1 tsp Vanilla extract
- Sea salt (Generous pinch.)
- 0.5 cup Chocolate chips (For the cookie dough base; the creator likes Lily’s or Bake Believe chips.)
- 1 cup Chocolate chips (For the chocolate topping.)
- 0.25 cup Peanut butter (For the chocolate topping.)
- Coarse sea salt (Pinch, for sprinkling over the chocolate layer.)
Steps
- 1
Line a 9 × 5-inch baking dish with parchment paper, leaving enough overhang on the long sides to lift the finished bars out easily.
- 2
Add the almond flour, ½ cup peanut butter, maple syrup, melted coconut oil, vanilla extract, and generous pinch of sea salt to a mixing bowl. Stir until the mixture is evenly combined and forms a thick, cohesive cookie dough.
- 3
Add the ½ cup chocolate chips for the base layer and fold them through the dough until distributed evenly.
- 4
Transfer the cookie dough mixture to the parchment-lined dish. Press it firmly into an even layer, paying particular attention to the corners and edges so the base holds together when sliced.
- 5
Place the remaining 1 cup chocolate chips and ¼ cup peanut butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between intervals, until melted and smooth. A double boiler may be used instead.
- 6
Pour the melted chocolate mixture over the cookie dough base and spread it into an even topping with a spatula.
- 7
Sprinkle the chocolate layer with a pinch of coarse sea salt.
- 8
Freeze the dish for about 1 hour, or until the topping is firm and the bars can be cut cleanly.
- 9
Lift the slab from the dish using the parchment overhang and slice into 8 bars. Keep the bars stored in the freezer and serve directly from frozen or let one stand briefly to soften.
