Dark Chocolate and Pumpkin Seed Cookies
Soft-centered wholemeal cookies with lightly toasted pumpkin seeds and chunks of dark chocolate. They bake up lightly brown at the edges while remaining tender in the middle.

Ingredients
- 75 g Light brown sugar
- 60 g Caster sugar
- 120 g Butter (Softened)
- 1 Egg
- 1 tsp Vanilla extract or essence
- 130 g Wholemeal flour
- 0.5 tsp Bicarbonate of soda
- 0.25 tsp Salt
- 100 g Dark chocolate (Chopped or use dark chocolate chips)
- 40 g Pumpkin seeds

Preheat the oven to 160°C (320°F). Line one large baking tray or two smaller trays with baking parchment.

Place the pumpkin seeds in a dry frying pan over medium heat. Toast for 4–5 minutes, stirring or shaking the pan occasionally, until they begin to crackle and jump around.

Turn off the heat and leave the toasted pumpkin seeds in the pan to cool while you prepare the cookie dough.

Put the light brown sugar, caster sugar, and softened butter in a mixing bowl. Cream them together with a fork until the mixture is smooth and well combined.

Add the egg and vanilla. Whisk until the egg is fully incorporated and the mixture is smooth.

Add the wholemeal flour, bicarbonate of soda, and salt. Stir thoroughly until a cohesive cookie dough forms and no dry flour remains.

Add the chopped dark chocolate or chocolate chips and the cooled pumpkin seeds. Stir until both are evenly distributed throughout the dough.

Using a tablespoon or cookie scoop, portion the dough into 12 mounds on the prepared trays, leaving plenty of space between them. Do not flatten the dough; the cookies will spread as they bake.

Bake for 10–12 minutes, until the edges are lightly brown but the centers are still soft.

Leave the cookies on the baking tray for a few minutes so they can cool and firm slightly. Transfer them to a wire rack and cool completely before serving.
Notes
The cookies are intentionally soft in the center when removed from the oven and will firm as they cool. Store cooled cookies in an airtight container.
