Ingredients

  • 1 Costco rotisserie chicken (meat carved off, bones reserved for broth)
  • 2 cup Jasmine rice (washed and drained)
  • 2.5 cup Chicken broth (or enough to reach the appropriate rice cooker fill line)
  • 2 inch Fresh ginger (sliced into coins)
  • 4 clove Garlic (smashed)
  • 1 tbsp Sesame oil (for sautéing aromatics)
  • 2 Green onions (cut into large segments)
  • 1 tbsp Soy sauce (for serving)

Steps

    Carve the meat from the Costco rotisserie chicken and set it aside. Reserve the carcass and bones.

    In a pot, simmer the chicken bones with water or store-bought broth to create a quick, enriched chicken stock. Strain and set aside.

    Heat sesame oil in a pan over medium heat. Add the smashed garlic and ginger coins, sautéing until fragrant.

    Add the washed jasmine rice to the pan with the aromatics. Stir-fry for 1-2 minutes until the rice is coated in oil and slightly toasted.

    Transfer the rice and aromatics to a rice cooker. Pour in the enriched chicken broth to the appropriate level for the amount of rice used.

    Place the reserved rotisserie chicken meat and green onion segments on top of the rice in the rice cooker.

    Close the lid and start the rice cooker on the standard white rice setting.

    Once the rice is cooked, remove the ginger coins and green onion segments. Fluff the rice and serve the chicken and rice together with soy sauce or a ginger-scallion oil.

Notes

This recipe is a shortcut version of traditional Hainanese Chicken Rice. Using a pre-cooked rotisserie chicken saves time while the rice cooker method ensures the rice absorbs all the chicken and aromatic flavors.
