Ingredients

  • 3.5 chicken breasts (3-4 chicken breasts, butterflied into cutlets)
  • 2 cup bread crumbs (can use panko bread crumbs)
  • 1 tsp black pepper
  • 0.5 tsp white pepper
  • 1 tsp dried parsley
  • 2 eggs (whisked)
  • 0.375 cup flour (1/4-1/2 cup)
  • salt (to taste)
  • vegetable oil (for frying; neutral oil)

    Start by setting up a 3 step dredging station with flour in the first bowl, whisked eggs in the second, and bread crumbs in the third.

    Season the breadcrumbs with black pepper, white pepper and dried parsley. Mix well using a whisk or your hands.

    Prepare the chicken by butterflying the chicken breast into two cutlets. Pat both sides of each cutlet dry with a paper towel to ensure the coating sticks properly.

    Bread the chicken by dunking in flour coating all sides and shake off any excess.
