Soft and Flexible Oat Tortillas
These soft, pliable tortillas are made by blending rolled oats with water and optional salt, then cooking the mixture into a dough and pressing it thin. They can puff up like pita and work with sweet or savory fillings.

Ingredients
- 2 cup Rolled oats
- 450 ml Water (Scant cups)
- 0.5 tsp Salt (Optional)
Steps
- 1
Add the rolled oats and optional salt to a high-speed blender. Blend until the oats become a very fine flour.
- 2
Pour in the water and blend again until the mixture is completely smooth.
- 3
Pour the mixture into a large non-stick skillet over medium heat. Cook, stirring constantly with a spatula. It will initially look like porridge, then thicken into dough after a few minutes.
- 4
Keep stirring until the dough is soft, smooth, kneadable, and pulls away easily from the sides of the pan.
- 5
Transfer the dough to a plate or bowl and let it cool until comfortable to handle.
- 6
Divide the dough into eight to nine equal pieces and roll each piece into a smooth ball. Keep the remaining dough covered so it does not dry out.
- 7
Place one dough ball between two sheets of parchment paper. Press it into a tortilla about 2–3 mm thick using a tortilla press, a heavy cutting board, or a cast-iron skillet. Repeat with the remaining dough balls, keeping unused dough covered.
- 8
Cook each tortilla in a hot, dry skillet over medium heat until golden-brown spots appear. Flip and cook the other side. Some tortillas may puff up like pita bread.
- 9
Serve with sweet or savory toppings or fillings, as desired.
Notes
The creator mentions an older method of boiling the water first and gradually whisking in oat flour, but prefers blending the oats, salt, and water together before cooking. Use certified gluten-free oats if gluten-free tortillas are needed. The listed yield of eight servings is estimated from the eight to nine pieces stated in the subtitles.
