A chewy, bouncy, and addictive snack made from silken tofu and potato starch, glazed in a sweet and salty soy-mirin sauce and wrapped in nori.

Ingredients

  • 300 g silken tofu
  • 6 tbsp potato starch
  • 1 tbsp soy sauce
  • 2 tbsp mirin
  • sesame oil (for frying)
  • roasted nori (cut into strips)

Steps

    Place the silken tofu into a bowl and whisk until completely smooth.

    Add the potato starch to the tofu and whisk until you have a smooth-ish mixture.

    Heat a little sesame oil in a non-stick pan over medium heat.

    Scoop the mixture into the pan in portions and cook for 2-3 minutes per side until golden brown.

    Reduce the heat to low, then pour in the soy sauce and mirin.

    Toss or turn the mochi to coat them well in the sauce until sticky.

    Wrap each piece of mochi in a strip of roasted nori and serve immediately.
