Ingredients
- 0.5 cup unhulled sesame seeds (Unhulled seeds are preferred for their richer, nuttier flavor; hulled sesame seeds may also be used.)

Place the sesame seeds in a dry skillet over medium heat. Toast, stirring frequently, until the seeds are fragrant and lightly golden, about 5 to 7 minutes; take care not to scorch them.

Transfer the toasted sesame seeds to a plate or shallow bowl and let them cool completely so they remain crisp while being ground.

Combine the cooled sesame seeds and kosher salt in a spice grinder, mortar and pestle, or food processor. Pulse or grind until the seeds are partially crushed and the mixture resembles a coarse, crumbly seasoning; do not process it into a smooth paste.

Transfer the gomasio to an airtight container. Use it as a seasoning for rice, stir-fries, grilled foods, and other savory dishes.
