Ingredients
- 250 g Mushrooms (Cut into large pieces, halves or quarters)
- 1 Green bell pepper (Cut into pieces)
- 2 Hot green peppers (Optional; use if you want the dish spicy)
- 3 Potatoes (Cut into small cubes; the source does not specify an exact quantity)
- 500 g Beef (Cut into steak-like slices; dry thoroughly before cooking)
- Ghee (For searing the beef and cooking the onion; add more during cooking if needed)
- 1 Large onion (Grated)
- 2 cloves Garlic (Mashed or crushed)
- 1.5 tsp Salt
- 0.5 tsp Meat seasoning (The source does not specify the seasoning blend)
- Water (Add enough to reach about 1–2 cm up the side of the pan without fully covering the ingredients; add more during simmering if needed)
Steps
- 1
Cut the mushrooms into large pieces, such as halves or quarters. Cut the bell pepper and optional hot peppers into pieces. Cut the potatoes into small cubes.
- 2
Place the cubed potatoes in an air fryer to brown while the beef cooks. The source also says they may be fried in oil instead, or cut into finger-shaped pieces rather than cubes.
- 3
Dry the beef slices thoroughly so excess moisture does not interfere with searing.
- 4
Heat a skillet or shallow pan over medium-high heat and melt some ghee in it.
- 5
Add the beef in batches, without salting or seasoning it at this stage. Sear each piece for about 2 minutes on each side, then remove it. Repeat until all the beef is browned.
- 6
Add the grated onion to the same pan. Stir it in the remaining ghee and cook until browned and beginning to caramelize. If the ghee has mostly cooked away, add more as needed.
- 7
Add the crushed garlic, mushrooms, bell pepper, and optional hot peppers to the caramelized onion. Stir everything together and cook for about 5 minutes, until the mushrooms begin to soften but are not necessarily fully cooked.
- 8
Return the seared beef to the pan. Add the salt and meat seasoning, then stir to distribute the seasonings.
- 9
Add a small amount of water—enough to come about 1–2 cm up the side of the pan without completely covering the ingredients.
- 10
Cover the pan and reduce the heat to low. Simmer until the beef reaches the desired tenderness, checking about every 10 minutes to stir and add more water if necessary. The beef may take more than 1 hour, depending on how tender you want it.
- 11
When the beef is cooked to your preference, turn off the heat. Add the browned potatoes and toss them gently in the sauce and juices in the pan.
- 12
Serve with white rice, Egyptian-style baked rice, or in bread.
Notes
The beef is intentionally seared without salt or spices initially; season it after returning it to the pan. The potatoes can be air-fried or fried in oil, and may be cubed or cut into fingers. Check the water level during the long simmer so the pan does not dry out.
